Evening Star Community Horse was commissioned by St. Gregory's University president Dr. David Wagie. It depicted both St. Gregory's Abbey and St. Gregory's University (which was closed in 2017; the Abbey continues). One side of the horse depicts the abbey with a fountain in front of it. The other side depicts Benedictine Hall, the castle-like historical building which housed many of the classrooms and major offices of the university since 1913. A Native American woman stands in front, representing both St. Kateri and the school's partnership with the Citizen Potawatomi Nation.

Sculptural faces are shown on the front of the horse's body, and a night sky with carefully defined constellations are on the horse's head. Monks from the abbey along with students, staff, and faculty assisted with this horse, underlining the St. Gregory's community identity. The horse was placed in front of McDonald's on Kickapoo.
